Grand-son and great grand-son of winemaker Paul Maury resumed in 2002 a vineyard of 7 ha located in Salles d'Aude in the massive Clape (Syrah, Grenache, Mourvèdre, Carignan) and a plot of Chardonnay, the oldest and best exposed the family farm Domaine La Combe Saint Paul. The desire to express himself through his passion and his profession, pushes Paul helped his father in January 2008 to develop their own winemaking tool in order to create wines in their image, simple and authentic. In December 2009, he bought 6 hectares of old vines of black grapes & land to plant on the high limestone Nissan lez Ensérunes. In 2010 he is working plantations of 9 ha: Vermentino, Roussanne and Viognier for white wines & Malbec, Mourvèdre and Pinot Noir for red wines. The vineyard of Domaine La Combe Saint Paul is conducted in farming and respect for the environment that sorrounded. The harvest, as the wine is the subject of great attention but leave an important part in the observation, the feeling and sometimes random. All the wines from Domaine La Combe Saint Paul are vinified and aged in the property with the help of his wife.
