Between the Mediterranean and the foothills of the Cevennes and Espinouse, countries of Herault, the Château des Estanilles is installed in the hamlet of Lenthéric, municipality of Cabrerolles, one of the seven villages of the AOC Faugères. These gray shale, blue, yellow or ocher were formed from clay of marine deposits. The Castle of Estanilles is anchored on land among the oldest in the world, who have experienced extreme events compression to primary geological era during the time of the Ordovician era, there are about 500 million years. Aridity forces the vines to tap water reserves deep in the basement, making it very sensitive to water stress in dry seasons. The environment of the Castle of Estanilles preserved and open to the north winds as much as those coastal mitigates heat during ripening grape berries. This is a decisive factor for the conservation of aromatic freshness and taste of wines. Soil composition is also an advantage. The strong presence of shale reinforces the cooling sensation when tasting and gives the wine a great aging potential. As nature is well made, this freshness is timely counteract a desirable characteristic terroir predominantly schist, sweet night restitution of heat stored during the day.
