Domaine Ollier Taillefer

Located in the South of France, in the northeast of the AOC Faugères in the heart of Langudoc, the Domaine Ollier-Taillefer is family. It is operated by Luc and Françoise Ollier, brother and sister, the 5th generation of locally-born wine and today responsible for these 36 hectares of vineyard in AOC Faugères, now converted to organic farming.
Production of Domaine Ollier-Taillefer is 1100 hectoliters on average. The whole of our production is bottled at the property and marketed by us.
In 1977 our parents, Nicole and Alain Ollier have sold the first bottle of the Domaine Ollier-Taillefer.
The vines are facing south at an altitude varying from 200 to 350 meters depending on the plot on the slate hillsides with steep slopes.
The vines of Domaine Ollier-Taillefer is traditional, mainly composed of Grenache, black Carignan, Syrah, Mourvèdre, Cinsault for our Faugères AOC red and rosé, and Roussanne and Rolle (or Vermentino) for white AOC Faugères.
Harvesting is done manually. It is carefully sorted before arriving in the cellar. Aware of the fragility of this schist soil, we have chosen to respect working as naturally as possible, which is why since 2001 we cultivated according to the principles of "reasoned culture" for many years.
In September 2009 we begin the conversion of the totality of our vineyard in Organic Agriculture (AB). September 2012, there it is, we get to the Domaine Ollier-Taillefer our certification in organic agriculture (wine and vineyard). After 10 years of growing, it is the logical continuation of the work ....
The new building of the Domaine Ollier-Taillefer winemaking also ends .... Canadian wells for soft, natural air conditioning, Gard stone - very porous shelly limestone - to let "breathe" building, building gravity to avoid pumping nuisance : everything is rational to avoid wasting water and electricity ...
