Since Roman times, the vine adorns the landscape Daurion Castle its changing colors with the seasons. At the heart of a beautiful natural setting, the Daurion Domaine reigns supreme since the sixteenth century. Sometimes named Grange or Country, sometimes Sheepfold, the Daurion Domaine overflows early activity and life.
His forge, stables, agriculture, make it self-sufficient. Over time, different owners succeed. It was in the fifties that the Collet family, represented by Henry (grandfather of the current owner), moved to Daurion Domaine never to leave again.
The magic of the site and the pioneering vision of a man will germinate in Daurion plantings of Chardonnay, unknown in this region dominated by red. In addition to an unusual white grape, is an effervescent which will spring a Champagne method for the less surprising in a land still wines.
Years pass, honors confirm the quality of the wines. Henry succeeds Henri father and Isabelle takes over. With the third generation, a wind blows. Youth, love of land, vitality and ambition are harbingers of producing great wines and effervescence.

The Daurion Domaine du Vignoble, fifty hectares, lies in one piece on the commune of Caux Hérault near Pézenas. The Mediterranean climate offers mild winters and warm temperate summers by the big blue close to the vineyards, believed to see the heights of Domaine Daurion.
Beautifully fresh preserves the grapes and brings balance to the wines. Facing south-east, the vineyard is based on a clay and limestone to basalt dominance. A casting volcanic lava gives the wines their typicité.Le Daurion Domaine passionately cultivates the white grape varieties such as Chardonnay, Grenache Blanc, Viognier and Roussanne for the vinification of white wine and bubble. Varieties such as Grenache, Syrah, Merlot, Cabernet Sauvignon, Cinsault and Petit Verdot allow them making rosé and red.
The entire vineyard is worked using traditional practices that respect the environment. The ground is plowed and well ventilated to allow the roots to draw in depth the minerals essential for growth. The vine follows a tying, breadcrumb meticulous allowing the plant to expand its leaf area and gain a perfect ripeness of fruit. Yields are low for a beautiful expression of terroir, and extract high concentration wines, quality and complexity.
